There are no HAXBYEs found in any nearby records so perhaps her surname was either misrecorded, miscopied or is being misread.

Searching for records of people named H*b*y* reveals a single baptism: of Marmaduke in 1608 by Christopher HEBDYN. The coincidence of Ursula's son also being called Marmaduke cannot be ignored. (Hebden village is 9 miles west of Pateley Bridge.) An Ursula HEBDEN was baptized on 18 Dec 1606 in Ripon Cathedral by William HEBDEN¹. This Ursula would have been 35 when she married, but that would explain her only having two children.
